Lemon Herb Haddock

I don’t make fish nearly as often as I should. It’s mostly due to the fact that I’m pretty picky about what seafood I will eat… And, I’m even pickier about what seafood I will cook.

I usually stick to pretty basic recipes when it comes to fish… I’m always afraid I won’t cook it right or that it will be too fishy, so I tend to keep it simple. A few weeks ago, I was inspired to try making salmon for the first time. I ended up making a version of this recipe… My husband thought it was great, but I couldn’t eat it. There’s something about knowing that there’s skin on the bottom of my fish that renders it completely inedible to me. Plus, I wasn’t thrilled about the taste. I gave it a fair chance, but it wasn’t my thing.

Slow Cooked Lentils with Chorizo

I realize that for someone who spends as much time in the kitchen as I do, you would expect that I could make rice. I would expect that I could make rice. But here’s the thing… I was a stirrer. I would stir and stir away, adding liquid when the rice would star to seem dry. I would end up with rice that would make a great substitute for wallpaper paste.

Everything changed last week. I decided to make these smokey, slow cooked lentils with chorizo in my slow cooker. I originally thought I would make some sourdough bread to go with the dish, but the Spanish-inspired flavors just begged for rice. I had to (finally) learn how to properly make rice, so I decided to go to the best source I know… Twitter!

Game Day Guacamole (WFMW)

There’s a pretty big football game coming up next weekend. The Super Bowl… You may have heard of it?

So, this week I thought I’d share my quick and easy go-to recipe for guacamole. No game day party is complete without some chips and guac, right?

I’ve mentioned before that my husband and I are big fans of Chipotle Mexican Grill. We especially love their guacamole, so I’ve been on a quest to come up with a recipe that rivals theirs. Every time I make guacamole at home, my hubby determines whether it is “Chipotle good” or not… And, I am happy to announce that this recipe has gained his approval.

Scalloped Sweet Potatoes Au Gratin

This weekend, I finally got back into the kitchen… I’m not just talking about reheating soup and tossing salads (which is what I had been doing for most of last week). I did some serious cooking and baking!

It all started on Friday with a lack of inspiration for dinner. I had no idea what I wanted to make, and frankly, I didn’t really feel like cooking at all. I hadn’t really gotten back into the kitchen, and I was finding the whole transition somewhat difficult. Instead, I called our favorite restaurant to see if we could squeeze in a reservation, but they were booked for the night (no big surprise, but it was worth a try). I had to make dinner, and it was too late to go to the store for groceries, so I had to use what I had on hand – sweet potatoes.

Perfect Pizza on Parchment (WFMW)

Perhaps this week’s Works for Me Wednesday post should actually be called “My husband can make pizza and so can you!”

Since my hand has been all wrapped up since I had surgery last week, my husband has been helping out and filling in for me in the kitchen. He’s good like that!

Last Friday, after my surgery, he decided that he would make pizza for lunch with the leftover homemade dough that I had in the fridge. Not only did he make pizza, but he baked it on my pizza stone! I did my best to give instructions, and Yellowdog supervised the whole operation (and cleaned up the cheese scraps that fell on the floor!).
