Slow Cooked Lentils with Chorizo

I realize that for someone who spends as much time in the kitchen as I do, you would expect that I could make rice. I would expect that I could make rice. But here’s the thing… I was a stirrer. I would stir and stir away, adding liquid when the rice would star to seem dry. I would end up with rice that would make a great substitute for wallpaper paste.

Everything changed last week. I decided to make these smokey, slow cooked lentils with chorizo in my slow cooker. I originally thought I would make some sourdough bread to go with the dish, but the Spanish-inspired flavors just begged for rice. I had to (finally) learn how to properly make rice, so I decided to go to the best source I know… Twitter!

Game Day Guacamole (WFMW)

There’s a pretty big football game coming up next weekend. The Super Bowl… You may have heard of it?

So, this week I thought I’d share my quick and easy go-to recipe for guacamole. No game day party is complete without some chips and guac, right?

I’ve mentioned before that my husband and I are big fans of Chipotle Mexican Grill. We especially love their guacamole, so I’ve been on a quest to come up with a recipe that rivals theirs. Every time I make guacamole at home, my hubby determines whether it is “Chipotle good” or not… And, I am happy to announce that this recipe has gained his approval.

White Bean and Kale Soup with Roasted Sausages and Tomatoes

It’s been downright chilly around here lately. Granted, it’s not nearly as cold as it is in Boston, Chicago, or Minneapolis… But, it has been cold!

So, when I have been thinking about what to make for dinner each night, soup is constantly the first thing that comes to my mind. I guess that it’s handy that soup is the theme for this month’s Kitchen Bootcamp challenge!

Peanut Butter Caramel Corn with Cashews

You really can’t go wrong when you combine sweet caramel with salty cashews. The caramel corn with cashews would have been perfectly fine and delicious on its own, but I couldn’t leave well enough alone. I am a big fan of peanut butter, so I decided to throw some peanut butter into the mix, too. It couldn’t hurt, right?

The peanut butter and caramel melt together to create a creamy and rich sauce. When you combine it with the popcorn and cashews, you end up with a crunchy snack that will satisfy your salty sweet cravings.
