I missed last week’s Friday Favorites post because I had the flu, but this week, I am back in full force! The worst part about being sick was that I couldn’t stand even the thought of food. Needless to say, reading and blogging about food was completely off limits.
Fortunately, this week, there have been plenty of great blog posts to welcome me back! It was tough to pick just a few posts this week… There are so many great recipes right now with all of the wonderful fresh produce from CSAs, gardens, and farmer’s markets! Here are a few of my favorites from the past week:
- If you’re looking for a creative way to use tomatoes, check out this Tomato Basil Salad with Grilled Cheese Croutons from Iowa Girl Eats… I think this is brilliant. It is on my lunch menu for Saturday (yes, I am one of those people who plan out menus each week).
- One of my favorite summer veggies is the bell pepper. I love the variety of colors – red, green, yellow, orange, even purple! These Philly Cheesesteak Tacos from Simply Scrumptious are a creative blend of two of my favorite foods. My stomach starts to grumble, demanding some Mexican cheesesteak goodness, every time I look at this post!
- This recipe for Poblano Pepper and Potato Tarts from The Other Side of Fifty sounds quite tasty. I will most likely be giving it a try in the next week or so. We have close to ten poblano peppers in our garden that are just about ready to pick!
- Back to tomatoes, these Slow Roasted Tomatoes from Spork or Foon look amazing. Be sure to check out all of the beautiful photos – the colors are amazing! I am saving this recipe for the next time we have friends over for dinner!
