Kitchen Bootcamp Roundup – Cookies, Brownies, and Bar Cookies

For the first challenge in our new book, The New Best Recipe, I decided to choose the chapter on Cookies, Brownies, and Bar Cookies… And, I’m glad I did!  Not only did it inspire me to work on a few new cookie recipes, but it inspired many of you to do some baking of your own.  Don’t miss all of these great recipes… I know I have a few new ones to try now!

For this month’s challenge, I decided to take on two recipes.  I started out on a quest for the perfect chewy Oatmeal Raisin Cookies… And, I finally have a recipe that I love! I also decided to update an old favorite recipe for s’mores cookie sandwiches, and I turned them into these Toasted S’mores Cookie Bars with Nutella Ganache.

I will probably get hate mail for admitting this, but I have never actually tried Biscoff spread. I know many of you are big fans, though, and I’m sure you will just love these Biscoff Brownies from A Little Bit of Everything.

I am always a fan of chewy cookies… And, these Chewy Cookie Bars with Easy Chocolate Frosting from Crunchy Creamy Sweet are my kind of cookie! They look like the perfect summer afternoon snack to me.

As you might expect, chocolate chip cookies were a popular favorite with this month’s challenge.  These Chocolate Chip Cookies with Toffee Bits and Coconut from Sweet Twist of Blogging are a fun twist on the classic.  If you ask me, you can’t go wrong with toffee!
