Nope, this isn’t grilled cheese! I know I promised you a grilled cheese recipe this week using the lovely sourdough bread that I shared on Monday. But, there’s been a slight change in plans.
Instead, today I’m guest posting over at Bluebonnets & Brownies, and I wouldn’t want to distract you with grilled cheese and have you miss on the opportunity to check out a great blog or miss out on my recipe for a Sweet Potato and Collard Greens Frittata with Smoked Cheddar.
It’s a simple recipe that’s packed with flavor… And, nutrition, too! It’s a good way to eat your veggies and pack some protein into your day. And, I think it tastes pretty good, too! Head on over to Bluebonnets & Brownies and check it out. Be sure to have a look around while you’re over there. Amber is the queen of Tex Mex and a great baker, too. So, I’m pretty certain that you’ll find something you like!
P.S. The grilled cheese will be here on Monday… I promise!
This is the second vegetable fritta I’ve seen this week. Your recipe is wonderful and the finished product looks delicious.
BTW ~ made your SF Sourdough yesterday. Your starter recipe and the bread recipe both turned out great. I have two loaves of SF Sourdough now in my freezer. One is missing a slice…I just had to taste it first :) Thanks so much Jen. You have no idea how happy I am to have a sourdough starter that turned out some lovely tasty bread.
Looks terrific Jenn…I’m a new convert to collard greens so I’m heading over now!
And…I forgot about Abbie. When I come to your site the form fields for comments are auto-populated. Why on earth my dogs name is there is beyond me, I promise I have never pretended to be her! Leaving this comment with that info corrected will get rid of that in my browser memory and I won’t have to shriek each time I leave a comment! Want to delete Abbie’s comment..though I’m sure she WOULD say the EXACT same thing I did!
Heading over to check it out now!! :-)
I’ve seen a couple of frittatas around this week – so I think it’s a sign that I need to make one next week! I love the idea of smoked cheddar with eggs.
This looks like the perfect frittata!
