There are few things better than fresh, sweet strawberries… Except maybe strawberry shortcake. And, if you ask me, replacing the shortcake with brownies makes it even better!
Even though I don’t have tons of energy for cooking and baking, I have started to get back into the kitchen a bit. Over the weekend, my mom dropped by and helped me make some strawberry jam with freshly picked strawberries (that she picked… I’m definitely not up for strawberry picking yet!). We had some strawberries left over and decided they would be perfect for strawberry shortcake. But, somewhere along the way, I decided to swap some brownies for the biscuits/scones that I would typically make… And, it’s a decision I did not regret!
The recipe is really quite simple. Everything can be made ahead of time… In fact, I recommend making everything ahead of time! I think it’s elegant enough for entertaining, but easy enough that you can pull it off with minimal effort. What’s not to like?
Strawberry Brownie Shortcake
(Serves 6)
- 2 cups fresh strawberries, hulled and chopped
- 1 tablespoon chopped fresh mint
- 1 tablespoon sugar
- 6 brownies
(Pick your favorite recipe… I’ll share my new favorite soon!) - Vanilla ice cream
Toss the strawberries, mint, and sugar together in a small mixing bowl. Stir to make sure everything is evenly combined. Cover with plastic wrap and refrigerate for an hour or two, or overnight.
Once the topping has had time to rest (and has gotten nice and juicy), prepare the shortcakes… Place each brownie on a serving plate (or bowl), and top with a scoop of vanilla ice cream. Top the brownie and ice cream with 1/3 cup of the strawberry topping, and enjoy!
