With the holidays fast approaching, I thought I’d spread a bit of holiday cheer of my own. I’ll be hosting a few giveaways (and even giving away a few things of my own) throughout November and December. Sound like fun? I thought so!

About the Book…
In his book Now Eat This, Rocco takes everyone’s favorite “guilty pleasure” foods (150 of them!) and lightens them up. Not only do the recipes come in under 350 calories each, but Rocco also shares healthy tips and ingredient substitutions that will surely help you to lighten up some of your favorite recipes.
Now, I’m not one to count calories (I have tried it in the past, and it just doesn’t work for me), but I also can’t afford to eat a steady diet of cookies, cupcakes, and cream sauce. So, I’m always looking for some healthy meals to throw into the mix – especially around the holidays! Sure, there are times to enjoy your favorite pizza recipe or dig into a bowl of fettucine alfredo, but there are also times where it’s good to have a few healthy tricks up your sleeve.
I’ve tried a few of the recipes from the book and really enjoyed them. The marinara sauce was one of my favorites (I do love a good Italian dinner!). I served it with some whole wheat pasta for an easy, light dinner one night last week. Of course, I did add a smidgon of parmigiano-reggiano to the top of mine, but, like most strongly flavored cheeses, a little bit goes a long way! My favorite indulgence is cake, preferably the birthday variety decorated with lots of thick icing roses.
My favorite dish would be Rachel Ray’s Spitfire shrimp over a bed of rice. It’s got the heat of hot wings without all of the calories!
Potatoes, potatoes and MORE potatoes! And oh yes–can’t forget potatoes! ;-) Boiled, baked, twice baked, fried, deep fried, French fried, escalloped, smashed, mashed, in soup, in a stew, with scrambled eggs, smothered in gravy with onions, covered with broccoli and cheese, sour cream and butter…any way, shape or form!
Spaghetti bolonase with loads of parm!!! Yum!
Homemade bread is my weakness! Desserts a close second!
I love to eat seafood alfredo far too much.

Fave dish – just about anything my fiancé cooks up! I don’t cook but he’s the one with a serious “kitchen addiction”! If I must choose it’s his filet mignon in red wine reduction w/onions and mushrooms, grilled asparagus w/balsamic drizzle and herb roasted potatoes! Hungry yet!?
I love, love, love creamy tomato sauce.
I love Lasagna and Cheesy goodness with everything! Also- any form of dessert = yes please!

I always feel I indulge when I go out for a sushi dinner. It’s just so good!
My favorite indulgent dish is loaded baked potato soup. I love this, but my recipe has so much fat and is high in calories that I only make it once maybe twice a year.
Chicken enchilada casserole is my all-time comfort food.
My favorite indulgence is the large (actually HUGE) oatmeal raisin cookie at Writers’ Workshop in Disney’s Hollywood Studios! I do NOT share this with anyone!

What a great giveaway! I think I will have to say Italian food with all its wonderful cheesiness and for that matter anything made with cheese is my biggest indulgence.

My favorite indulgent dish is probably my hubby’s chocolate espresso cheesecake. I can only get him to make it once in a while, and it’s so amazing…it’s the kind of cheesecake that makes you gain 5 lbs just by looking at it. ;-)

I’ve got to go with my all time favorite meal – fried chicken with mashed potatoes (and gravy of course!), southern buttermilk biscuits, green beans amandine and a nice slice of chocolate cake with peanut butter icing for dessert! Yum!
