The April 2010 Daring Bakers’ challenge was hosted by Esther of The Lilac Kitchen. She challenged everyone to make a traditional British pudding using, if possible, a very traditional British ingredient: suet.
I almost forgot about the Daring Bakers challenge this month… Oops! I was about to take a pass on it, but I remembered that I had to sit out last month’s challenge. I couldn’t bear to slack off two months in a row, so I pulled this one together at the very last minute! I didn’t have time to track down suet for this challenge, but I did manage to make a sponge-style pudding with butter as a substitute.
I came across a recipe for Very Chocolate Pudding from The Pudding Club, so I decided to give that a try. My parents were coming over for dinner, so I figured it would make a nice dessert. The recipe basically seemed like a brownie recipe to me, so it seemed like a safe bet. Who doesn’t like steamed brownies?
I was a bit skeptical about steaming the pudding, but it turned out better than I had expected. I cooked the pudding in a glass bowl in my steamer set, and it worked like a charm. I didn’t expect to like the pudding, but when all was said and done, I think I may have changed my mind. Next time, I’ll try a more ambitious recipe!
Chocolate Pudding

Start by creaming together the butter and sugar. Add the eggs one at a time, beating after each addition.
In a separate bowl, combine the flour and cocoa powder. Gradually add the dry ingredients into the creamed mixture. Stir in half of the chocolate chips.
Lightly grease a glass baking dish. Line the bottom of the dish with the remaining chocolate chips. Spoon the batter on top of the chips, and smooth so that it is even.
Place a piece of parchment paper and a piece of aluminum foil over the top of the baking dish, and secure with some string. Steam for about 1 1/2 hours.
Remove the foil and parchment. Loosen the pudding with a spatula, and invert onto a serving dish. Enjoy!

Looks lovely. Mu mum used to make steamed chocolate sponges when I was growing up. Not had one for years, so this brought back the memories. I hope you manage to track down some suet for next time, it gives a slightly different texture.
