Week 2 of the Ten in 10 challenge has now come and gone! I hope you are all doing well with your goals and feeling healthier.
Week in Review…
I’ve delayed this post long enough, so let’s just get right to it… I have mixed feelings about the past week. I had the best of intentions, but as it often does, life kind of got in my way. I turned things around pretty well towards the end of the week, though, so I’m not letting it get me down.

Healthy Relationship with Food – Food was my struggle again this week. I started the week off well, but had a few rough days due to some unexpectedly long meetings and busy schedules. For example, one day I had meetings that I had to go to. In preparation, I made a healthy breakfast, packed a healthy lunch, and put fish in the fridge to thaw so that I could make a quick dinner when I got home. I did eat my healthy breakfast, but ended up having to go out to eat for lunch (with few healthy choices). My meeting went about 4 hours longer than I had expected, and I never had time to run errands (including the grocery store for food). Then, to add insult to injury, I got home and my fish was *still frozen*. So, we went out to eat. Fortunately, towards the end of the week, I got back in a groove and made some healthy and nutritious meals for the hubs and I. Needless to say, I have plenty of room for improvement next week.

Regular Workouts – Similar to last week, I managed to do pretty well with my workouts this week. (Thank goodness, I think it helped to keep the not-so-great food choices from having a huge effect!) I did get in my extra 45 minute workout, too. My goal for next week is to just keep going and incorporate another 45 minute workout into my week. I’m also mixing up my cardio a bit and working in the elliptical and the treadmill to keep things interesting (instead of just using the Wii).

Positive Outlook – This week turned out to be a great challenge when it came to my attitude. It was especially rough when I got on the scale mid-week and saw it tipping in the wrong direction. However, I managed to really use my frustration as motivation to do better. I got in an extra hard workout and created some new healthy dishes to get myself back on track.

One thing that I am really enjoying about the Ten in 10 Challenge is that it has inspired me to create some new healthy recipes and helped me remember some of the recipes that I had forgotten about. If you’re looking for some healthy ideas this week, give these recipes a try:

My favorite new recipe this week was my Tropical Mahi Mahi. It’s not a traditional winter dish, and it was exactly the fresh burst of flavor that I needed this week. The mango and pineapple salsa will definitely transport you to a warm, tropical place… For a few minutes, at least!

One of my favorite go-to healthy dishes during the week is a frittata. I only use half of the yolks from the eggs, cutting down on the fat and cholesterol! Of all of the frittatas I’ve made, I think my favorite is the Apple Maple Chicken Sausage Frittata.
- If you’re looking for something a bit more “comforting,” be sure to give this Cozy Cauliflower Soup a try. The pureed veggies give the soup a thick, creamy texture without having to add any cream. Using a good quality Parmigiano-Reggiano cheese gives the soup a lot of flavor without having to add a lot of cheese.

I fell off my exercising/eating better routine last year and needless to say the 15 lbs I lost some of it has come back and of course still in the wrong places. I would love to win this so I can use it for myself and the rest of our family. I have issues with portion sizes and the Italian in me is “mangiare, mangiare” and always dishing out more. Jenn, I so understand! A couple nights this week I ate WAY later than I would have liked, and too much, lol! Tomorrow is a new day and it’s great to hear you still got your exercise in. Can’t wait to meet you in NYC :D
