It’s hard to believe that Memorial Day weekend is already over! I had a busy weekend and didn’t have much time for blogging. On Sunday, we went to a picnic at my grandmother’s house. I had offered to make burgers and a pasta salad. I wasn’t really in the mood for the usual pasta salads. I love caprese salad, though, so I used that as inspiration for this quick and easy pasta salad!
Ingredients:
- 1 pound mezzo ditale pasta (or any short cut pasta)
- 2 pounds tomatoes, diced
- 8 ounces small bocconcini (fresh mozzarella balls), halved
- Handful of fresh basil, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons white Balsamic vinegar
- Kosher salt
- Freshly ground black pepper
Directions:
Prepare the pasta according to the package directions. Drain and rinse.
Meanwhile, chop the tomatoes, bocconcini, and basil. Combine in a large bowl with the drained pasta. Add the olive oil and vinegar. Season liberally with salt and pepper. Toss to evenly combine all of the ingredients. Chill for at least an hour prior to serving.

I love anything that includes caprese. It’s really a great alternative to the usual pasta salads found out there. It’s light too.
