One of my favorite flavor combinations is fresh cilantro and lime. The pair of flavors, when added to a dish, provide a bright and fresh taste that really wakes up your taste buds. I find myself adding these ingredients to lots of my recipes, especially in the spring. So, throughout the week, I thought I would share a few of my current favorites using cilantro and lime!
When I think of cilantro and lime, the first thing that pops into my head is guacamole. Just like onions, celery, and green peppers are the Cajun trinity of vegetables, I think cilantro, lime, and avocado should be considered the Mexican trinity. Granted, I am not Mexican, so no one really cares what I think! I do use the three ingredients quite often, though – and I will take any chance I get to make guacamole.
Often when I make guacamole, I leave it chunky – almost like a guacamole salad. It can be eaten as a dip with tortilla chips, or served as a topping for quesadillas, fajitas, or tortilla soup. Sometimes I just eat it plain with a spoon!
Guacamole:
- 1 avocado, diced
- 1 small tomato, diced
- 1/4 cup onion, diced
- Juice from 1 lime,
- 1 tablespoon chopped fresh cilantro leaves
- Pinch of Kosher salt
Combine the avocado, tomato, and onion in a small bowl. Squeeze the lime over the mixture, stirring to coat evenly. Add the cilantro and salt and stir to combine.
Perfect combination indeed. With the guacamole and chip alone, I’d be happy.
