Most years I make candy for Easter – peanut butter eggs, chocolate bunnies, mocha truffles, etc. This year, though, many of my friends and family (myself included) are watching what they eat and trying not to have too many sweets. So, it seemed silly to spend countless hours making chocolates that everyone is trying to avoid!
I couldn’t just make nothing, though, so I decided to decorate some giant sugar cookies. I made only half of a batch – just enough to give as gifts without having too many leftovers! As usual, I am not terribly thrilled with how they turned out. I always have this great picture in my mind when I start decorating, but I have trouble recreating what’s in my mind when it comes to actually piping the cookies. I think the issue may be my icing recipe – it never gets quite stiff enough. I use egg whites – but maybe meringue powder would be easier. Next time!
I wrapped each cookie in a small cellophane treat bag and tied the bag shut with lavender and white curling ribbon. I arranged the wrapped cookies in small Easter baskets to give as gifts. Hopefully everyone will be happy with their cookies!
I did not have to make dinner for Easter since my mom and my grandmother are cooking. I did make dessert, though – strawberry cupcakes with cream cheese frosting. I will post that recipe soon! Until then, I hope you all have a wonderful Easter holiday!
