It is a stretch to call this post a recipe… sandwich assembly directions would be more appropriate. Either way, it’s a quick idea for lunch or dinner when you don’t have a lot of time! I love the buttery flavor of the avocado in this sandwich, so I didn’t feel that it needed any condiments. If you prefer, you can add your favorite mayonnaise, mustard, or dressing.
Ingredients:
- Italian bread, sliced thickly
- Turkey breast, sliced thinly
- 1 avocado, sliced
- 1 tomato, sliced
- Mozzarella cheese slices
- Cooking spray
Directions:
Preheat a nonstick grill pan over medium heat. (Note – some nonstick pans should not be preheated empty. If this is the case, brush with a small amount of oil prior to preheating the pan.)
Lay out two slices of bread for each sandwich. Top one slice of bread with the sliced turkey breast and two slices of tomato. Top the other slice of bread with two slices of mozzarella cheese and avocado slices.
Spray the grill pan with cooking spray (unless it has already been brushed with oil). Assemble the sandwich and place on the grill pan, topping with a panini press (or a weighted baking sheet). Cook for a 3-5 minutes, then flip and cook for an additional 3-5 minutes on the other side.
I like to slice the sandwich in half for pretty presentation, and because it’s easier to eat.
