It’s Friday again… Can you believe it? I can’t, but that’s because it’s not *actually* Friday yet. It’s Thursday night… for another 57 minutes, at least.
This has been a busy week for me. Earlier in the week, I found out that I am headed to NYC in a few weeks. I was also busy with work and a few projects around the house (including rearranging furniture in three different rooms). So, I’m writing my Friday Favorites a bit early because I have a busy day planned on Friday. I typically try to take Fridays off from my “day job” (I can get away with that since I am a part-time consultant and set my own schedule). As you read this, I’ll be spending some quality time with my soon-to-be sister-in-law and doing some shopping at Ikea! Hooray!
I don’t mean to rub it in that I will be off enjoying myself. So, to help ease the pain, here are a few blog posts that should make you feel better!
- I have to give these Chocolate Chip Biscotti from Simply Scrumptious a try very soon. I love biscotti with a cup of coffee. Unfortunately, when I have made biscotti in the past, they haven’t turned out well. I’m hoping this recipe will turn out a bit better for me!
- If you are participating in the #10in10 challenge as I am, you will probably be interested in this Hot (and Healthy!) White Bean Dip from Our Best Bites. I think it would be fabulous with some endive. I’m pretty sure I will completely forget that it’s healthy after one bite.
- I am a big fan of almost all Mexican food. One of my favorites is enchiladas, so imagine my delight to discover this recipe for Chicken, Black Bean, and Spinach Enchiladas from goodLife {eats}. Yes, these will be on the menu at my house very, very soon.
- Finally, I have to share this recipe for Pasta with Zinfandel Tomato Sauce and Ricotta from Evil Shenanigans. It sounds fancy and complicated, but it’s not! Really… Check it out for yourself! Besides, you can’t beat wine and pasta.
