I have finally completed my recipe for Mission: Lime – this week’s Blogger Secret Ingredient challenge! I was back and forth on what to make. My original intention was to make something savory and spicy. However, sickness got the best of me. Instead, I decided to make a batch of cookies. I have had coconut in my pantry for a while just waiting to be used, so I figured I would attempt a coconut lime cookie.
Before I discuss the cookies, though, I wanted to provide a few details about the prize for the winner of the Mission: Lime challenge. The winner will receive a small lime colored “bar board” cutting board, perfect for slicing your favorite citrus for drinks, and a set of multi-colored mini prepping bowls! I will also be preparing the winning recipe and featuring the winning blogger on my site in the coming weeks.

I must admit that these cookies did not turn out quite as I intended, although they were pretty good. The flavor of the lime and coconut was a wonderful combination, and the cookies were soft and chewy. However, they got fairly dark on the bottoms while baking, but did not turn the golden color I had hoped for on the tops. I would have liked a slightly crisper cookie.
I typically would make these cookies another time and try to improve on my recipe. However, since time is running out for this week’s BSI, I decided to post the cookies now. Besides, I’m sure there are a few bloggers out there who know exactly what needs to be done. If anyone has any suggestions to improve the recipe, please do let me know! I have trouble improvising cookies and cakes.
Chewy Coconut Lime Cookies
- 1 cup flour
- 1 1/2 cups oats
- 1 cup coconut
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 1 cup sugar
- 1 egg
- Zest and juice from two limes
- 1/2 teaspoon vanilla extract
Preheat the oven to 375°F. Lightly grease baking sheet(s) or line with parchment paper, and set aside.
In a medium bowl, combine the dry ingredients – flour, oats, coconut, baking powder, and salt. In a mixing bowl, cream together the softened butter and sugar until fluffy. Add the egg, lime juice and zest, and vanilla extract. Beat until well combined.
Gradually add the dry ingredients to the wet ingredients, beating after each addition until all of the dry ingredients are incorporated into the batter.
Drop tablespoons of the batter onto the prepared baking sheets. Bake for 8-10 minutes. Cool for 1 minute on the baking sheet and then transfer to wire racks to cool completely.
Ooh those look yummy! I made lavender lace cookies a few months ago and they used oatmeal and coconut and I think they’d provide a good base for what you mention your ideal is. If you omitted the lavender, added lime zest and maybe replaced some of the oatmeal with extra coconut they might just be perfect! Those look so yummy. The recipe I was working on for my lime submission didn’t turn out as well as I had hoped. Bummer!!! It was mini lime tarts. I was super excited to submit something, too. I’ll make it again eventually, but I’m sad I don’t have anything to submit. :-(
I think they look really yummy! Lime and coconut is a great comb and I would eat way too many of these.

I enjoy making cookies that you can plop on a sheet and not worry about making into a ball. How good do you think these would be if I used all whole wheat flour?

Sadly the weekend progressed without me posting about the Secret Ingredient: Lime. I was looking forward to participating in this for the first time, but time itself got away from me and my limes ended up as slices at the tail end of tequilla shots! Your cookies look and sound heavenly Jen.

i love anything lime and i havent really come across any cookies that uses the combination of coconut and lime so this is something v interesting to me:) will hopefully be able to try it sooon:)
I really like the combo of lime and coconut! These look really delicious, even if the bottoms turned out too dark for your liking. I wonder if turning the oven down to 350 and cooking them a little longer would help even things out between the top and bottom.
These would be just perfect for me and my daughter – we like our cookies extra crispy!

These are AMAZING! I made them with all whole wheat flour and 3 egg whites instead of the egg and used splenda (which I wasn’t really wanting to use, but had it on hand and tried it for the first time baking…not bad, but not something I’d always use.) Anyhow, they really are super awesome. Thank you for sharing (even though I changed it a bit…haha)

i would have used a tsp of lime oil instead of the actual limes…and bake them on parchment paper you can get it from king arthurs site
I made these and they were delicious, but to not have brown bottoms, I stacked two cookie trays and baked at 350 and just watched until they were done. They came out perfectly white all over. I am now just contemplating drizzling white chocolate over the top.
